Single-Serving Tasty Fall Desserts

Mmmmm….Autumn.  Something about the cooler air stirs my inner baker.  I start thinking of warm apple pies topped with ice cream, sweet muffins, chocolate candy, and pumpkin everything.  But the devil of these cravings is the extra pounds to be gained and the subsequent guilt.  You see, I really cannot afford to bake a whole cake or pie in my house because we would eat the whole thing in a day.  So, I’ve come up with quick single serving desserts that delight my family in a snap.

#1 – Gluten-Free Pumpkin Brownie
Serves 1
2 TBSP Almond Meal
1/2 TBSP Ground Flaxseed
1 TBSP Brown Sugar, packed
1 TBSP Unsweetened Cocoa Powder
Pinch of Sea Salt
1 TSP Pumpkin Pie Spice
1 TBSP Pumpkin
Combine dry ingredients in a small ramekin, coffee mug, or bowl.  Add in pumpkin and stir.  If needed, drizzle in some water until the mix is moist like cake batter.  Microwave for 45-60 seconds (microwaves vary).  Top with Vanilla Ice Cream and/or Whipped Cream & Cinnamon!

#2 – Skillet Apple Crumble
Serves 2-4
1 apple, cubed
3 TBSP butter
3 TBSP Panko Bread Crumbs
1 TBSP Cinnamon
1 TBSP Dulce de Leche or Caramel (Dulce de Leche can be made on the stovetop by submerging an unopened can of Sweetened Condensed Milk in water and simmering for about 2 hours).

Add Butter to a Warm Skillet on Medium heat.
Add the apple & cinnamon.   Cover for about 5 minutes, stirring occasionally.  Add in the Panko and cover for another 2 minutes.   Turn off the heat and stir in Dulce de Leche or Caramel.  Serve with vanilla ice cream and/or whipped cream.

#3 – Gluten-Free Bananas Foster Mini Pie
Pie Crust:
2 TBSP Almond Meal
1/2 TBSP Ground Flaxseed
1 TBSP Brown Sugar
1 TBSP Cinnamon
Pinch of Sea Salt
Water
(Serves 1)

Combine the dry ingredients in a ramekin, small bowl, or coffee mug.  Drizzle in water until the mix is moist like cake batter.  Microwave for 45-60 seconds.

Basic Bananas Foster:
3 TBSP Butter
2 TBSP Brown Sugar
2 Bananas, Sliced and Quartered
2 TBSP Rum
1/2 TSP Vanilla Extract
Whipped Cream
1 TBSP Chopped Nuts
(Serves 3-4)

Melt the butter in a skillet over medium-low heat.  Add in the brown sugar, vanilla, and rum.  Stir until the mixture is brown and bubbly (just about a minute or so).  Add the bananas, cook for about one more minute.  Remove from the skillet and put the bananas with the sauce on top of the pie crust.  Top with whipped cream or ice cream, and chopped pecans or walnuts.

There you go!  A few warm and sinfully delicious single-serving desserts that can be made in a pinch.  Not much preparation; no more than 10 minutes to make!  Everyone deserves a treat now and again, especially with the savory flavors of Fall.  Enjoy!
